Ingredients
For the Chicken:
- 6–8 thin sliced chicken breasts
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 1/2 cups buttermilk
- 1 large egg
- 1 tablespoon hot sauce
- Oil for frying (vegetable or canola oil)
For the Gravy:
- 1/4 cup reserved oil from frying
- 1/3 cup all-purpose flour
- 2 cups milk
- Salt and pepper to taste
Instructions
1. Heat the Oil
In a deep fryer or a large pan, heat oil to 325°F. Ensure the oil is a few inches deep to properly fry the chicken.
2. Prepare the Dry Mixture
In a large bowl, whisk together the flour, baking powder, baking soda, salt, pepper, and garlic powder. This dry mixture will form the crispy coating.
3. Prepare the Wet Mixture
In another bowl, whisk together the buttermilk, egg, and hot sauce. This mixture will help the flour adhere to the chicken.
4. Dredge the Chicken
Take each chicken breast and dredge it in the flour mixture, then dip it into the buttermilk mixture, and finally back into the flour mixture. Press down to ensure the flour sticks well to the chicken.
5. Fry the Chicken
Place the chicken in the hot oil and fry each side for 3-5 minutes until golden brown. Remove and drain on a paper towel-lined plate. Repeat with all chicken breasts.
6. Prepare the Gravy
In a large pan, add 1/4 cup of the reserved oil from frying. Heat on medium-high and stir in the flour until absorbed, cooking for about 1 minute. Slowly add in the milk, whisking constantly until thickened. Season with salt and pepper to taste.
7. Serve
